Victoria Paszel, MS, RD, LD, is a registered dietitian specializing in sports nutrition and eating disorder treatment. She earned her Master of Science in Nutrition and brings a strong background in both collegiate and professional athletics to her clinical work. Prior to joining EDCare, Victoria served as the Assistant Director and Interim Director of Olympic Sports Nutrition at West Virginia University, where she supported Division I athletes across multiple Olympic sports. She also worked with the Boston Celtics nutrition team, gaining experience in a professional sports setting.

At EDCare, Victoria works with both athletes and core patients, providing individualized nutrition counseling and group education to support medical stabilization and the rebuilding of a healthy relationship with food. Her approach is rooted in treating each patient as an individual, recognizing how personal history, identity, and environment shape recovery. She is especially passionate about increasing awareness of eating disorders within athletic populations and bridging the gap between performance culture and healing.

Victoria is a member of the American Sports and Performance Dietitians Association, the Academy of Nutrition and Dietetics, Sports and Human Performance Nutrition, the National Strength and Conditioning Association, and the National Academy of Sports Medicine. Outside of work, she enjoys skiing, baking, and exploring Colorado’s outdoors.
